Hawaiian BBQ Chicken Kabobs

We have teamed up with Kroger to share with you one of our favorite summer past-times: Kabobs on the grill! I remember sitting on our green picnic table outside with the smell of marinated kabobs grilling away. We would sit together as a family and laugh and talk for hours.  We loved grilling and just enjoying the beautiful weather in the summer.

This year we are celebrating summer by sharing a delicious #SummerIsDelicious recipe with you:
Hawaiian BBQ Chicken Kabobs. If you haven’t pulled out the grill yet, this recipe will give you the perfect reason to do so! If you have not used any of Kroger’s Private Selection sauces, I would highly suggest trying them! (Especially the Texas Inspired BBQ Sauce!)

For this recipe I’m mixing two of my favorites sauces.
Private Selection Hawaiian Pineapple Wing Sauce
Private Selection Texas BBQ Sauce

Just a few tricks:
Soak your skewers for at least 5 minutes before putting on your ingredients and sticking them on the grill. They won’t burn nearly as bad if you do!

If you rub a little olive oil on your grill before you put your Kabobs on, they won’t stick and will be much easier to turn.

Don’t forget to save about 1/2 cup of the marinade to glaze over the top of your Kabobs when they are done cooking and are still hot. The marinade is my favorite part!

Ingredients

  • 3 cups fresh cubed pineapple or 2 (21oz) cans of pineapple
  • 1 large green pepper, cut into 1 inch pieces
  • 1 large red onion, cut into 1 inch pieces
  • 3 large chicken breasts, cut into 1 1/2 inch pieces
  • Private Selection Hawaiian Pineapple Wing Sauce
  • Private Selection Texas BBQ Sauce

Instructions

  1. Place the Hawaiian Pineapple Wing Sauce and the Texas BBQ sauce in a bowl and mix until well combined. Place chicken in a gallon size resealable bag. Reserve 1/2 cup of the marinade in refrigerator then pour remaining marinade over chicken. Seal bag and refrigerate 1 - 2 hours (or even over night.)
  2. Soak 10 wooden skewer sticks in water for 1 hour.
  3. Preheat a grill over medium heat to 400 degrees. Put the marinated chicken, red onion, bell peppers, pineapple and onto the skewers until all of the chicken has been used.
  4. Brush grill grates with olive oil then place skewers on grill. Grill 5 minutes then rotate to opposite side and cook 4 minutes longer, or until chicken is done.
  5. Place cooked skewers on a cookie sheet and brush the remaining sauce on the vegetables and chicken.
  6. Serve warm
